RECIPE: Pork Loins with Berry Balsamic Glaze Ingredients: 2 pork tenderloins 2 cloves of garlic, minced 1 tbsp mustard ½ cup of brown sugar 1 tbsp of balsamic vinegar 1 cup of olive oil 2 tbsp fresh rosemary, chopped 2 tbsp fresh thyme, chopped Sauce: 1 large shallot, minced 1 tbsp butter 1 tbsp olive oil ½ cup dried cranberries 2 tbsp raspberry jam 1 cup chicken broth 1 tbsp fresh rosemary, chopped Method: Preheat oven to 375 degrees. Whisk together the garlic, mustard, brown sugar, balsamic vinegar, olive oil and herbs in a shallow dish. Coat pork loins well with marinade, cover and refrigerate for at least 30 mins. Roast pork until internal temperature reaches 155 degrees (about 20-30 mins). Meanwhile, combine butter and oil in a sauce pot, heat until melted. Sautee shallots until soft, add dried cranberries, jam, and broth. Bring to a boil until reduced. Add fresh rosemary. Slice pork and place on platter, pour sauce over the top and serve immediately.
