This is the best tomato soup Ive ever tasted, and its so simple to make. I use home canned tomatoes, but you can certainly use store bought. I used fresh onions and garlic for this video, however, this soup can be made entirely from your pantry. You can use dehydrated onion and garlic as well as dried basil. CREAMY TOMATO BASIL SOUP 2 tablespoons olive oil 12 cup onion, finely diced 5 cloves garlic, minced 1 quart tomato sauce 1 pint diced tomatoes dash cayenne pepper 2 tablespoons brown sugar, or to taste 2 tablespoons finely shredded basil (or 1 teaspoon dried) 34 cup evaporated milk salt & pepper to taste Saute onion and garlic in olive oil until translucent. Add tomatoes and cayenne pepper, and simmer for 10 minutes. Add 1 tablespoon of brown sugar, stir and taste for acidity. If still too sharp, add more brown sugar until the strong acidic taste is subdued. Reduce heat to be sure it wont boil. Add milk and basil. Add salt and pepper to taste. Serve with crusty bread.
